Christmas is around the corner, and we all know that some of the best things about this season are the cakes and sweets. If you’re looking for someone different in your Christmas’ menu, in this recipe we’re going to make polvorones, which are a type of traditional Spanish shortbread, alongside a not-so-traditional ingredient: Cannabis.
What is a polvoron?
A polvorón (plural: polvorones) is a type of sweet, crumbly, and delicate shortbread-like cookie popular in Spain and Latin America. It is made from a mixture of ground toasted almonds or other nuts, sugar, flour, and sometimes flavored with cinnamon or lemon zest, among other ingredients.

We’re going to make chocolate and almond shortbread, which are the sweetest polvoron type and not quite as dry as the regular ones. Cannabis shortbread is much more potent than cannabis cookies and other cannabis desserts due to the fact that they’re made using lard, which has an incredible amount of fatty cells (more than normal butter) which means that cannabinoids are retained much better.

Ingredientes
- 250 g 9 oz lard (for cannabis lard)
- 5 g dried cured flowers (or 15-20 g dried, cured leaves) (for cannabis lard)
- 1 bottled water (for cannabis lard)
- 350 g 1 ½ cups flour
- 120 g 1 cup powdered sugar
- 100 g 1 cup cannabis lard
- 50 g 2 oz almonds
- 50 g 2 oz melting chocolate

Making lard step by step
- Begin heating up some water. Once it begins to boil, pour in your leaves and buds. Cannabinoids do not dissolve in water, so all you’re doing is cleaning your weed and getting rid of dust and extra chlorophyll.5 g dried cured flowers (or 15-20 g dried, cured leaves), 1 bottled water
- Once your weed is clean, drain it carefully and let it sit while you prepare another pot of water. Once it’s boiling, lower it to half heat and put your lard in.250 g 9 oz lard
- After mixing for a few minutes, the lard should have fully dissolved, which is when you’ll need to add your weed. Mix at half-heat for 20 minutes, which should be enough time for the lard to absorb any and all cannabinoids.
- Next, filter it through your sieve, let the resulting liquid sit at room temperature for a couple of hours. Once it’s cooled down, let it sit in the fridge for 24h.
- After a day, the lard should be floating as one solid piece on top of the water with a much more intense color than it had before. Remove it using a spoon and place it in an appropriate container.
Making cannabis polvorones step by step:
- First, preheat the oven to 320ºF (160°C) and begin melting your chocolate using the double boiler (or bain-marie) method. Once the chocolate has been fully melted, put it to one side and let it cool down to room temperature.50 g 2 oz melting chocolate
- Once the oven is heated, stick the almonds in for 10 minutes at the most, making sure they don’t burn.50 g 2 oz almonds
- After toasting your almonds, you’ll need to heat the flour for no more than 20 minutes. Once it begins looking a bit toasted, you’ll need to take it out.350 g 1 ½ cups flour
- While the flour is heating up, your almonds should have cooled down enough to grind them up. Once you’re done with the flour in the oven, take it out and increase the temperature to 392ºF (200°C) in order to pre-heat it for the final result.
- Once everything is prepared, pour the flour, almonds, half of the powdered sugar, chocolate and cannabis lard into a bowl (the lard may have hardened, so you may need to heat it up a bit with the double boiler method).120 g 1 cup powdered sugar, 100 g 1 cup cannabis lard, 50 g 2 oz almonds, 50 g 2 oz melting chocolate, 350 g 1 ½ cups flour
- You’ll need to mix it all up for at least 15 minutes to make sure that the mixture is perfectly even and balanced (this is possibly the hardest part of this recipe). Once the mixture is smooth, cover it up with cling film and stick it in the fridge for 30 minutes.
- Once it’s cooled enough, sprinkle some flour on your working surface and roll out your ball of flour using a rolling pin until it’s about 1.5 cm (0.6 inches) thick. Use a glass to cut circles out of the mixture and then place your little shortbreads on your cooking tray.
- Depending on the glass you’ve used, you can get around 20 polvorones from this mixture, which you’ll need to put in the oven for about 15-20 minutes (this will depend on your oven, as some are stronger than others, so you’ll need to keep an eye on them).Â
- Once they’re done and dusted, sprinkle some more powdered sugar over them. Let them cool and you have your very own polvoron recipe with cannabis.
